8 oz. linguine
1/4 c. butter
1/2 c. chopped walnuts
2 garlic cloves, crushed
pasta water
1/2 c. parmesan cheese, freshly grated
Fresh cracked pepper
parmesan cheese and fresh herbs for garnish
Cook the linguine in well salted water according to the directions on the package.
While the linguine is cooking, begin browning the butter over medium heat in a skillet that is large enough to hold the pasta once it's cooked. When the butter is just beginning to brown, add the chopped walnuts. Continue stirring while the butter and walnuts continue to brown. This should only take a few minutes. When the mixture is foamy and all is looking nice and toasty, add the crushed garlic and let cook for a few seconds, stirring constantly. Immediately add the cooked linguine and some of the cooking water. Add the parmesan cheese and fresh cracked pepper. Toss together with a tongs, adding more pasta water if needed to create a small amount of sauce. Taste and add salt if needed.
Transfer to warmed bowls and garnish with more parmesan cheese and fresh parsley, basil or sage.
